You got you facts wrong. There were initially 2 ships, the Mayflower and the Speedwell. The last was a Dutch ship and was a fluit. Butt it proved to be to small and not fit for the journey so it returned to the port and only the English build Mayflower continued her voyage. However, the mayflower is a Carrack, not a fluit. Back to your question: yes you could use a mayflower kit to build another Carrack. They all looked more or less the same. If you google for carrack you will find lots of ships that look similar to the mayflower.
